The Global 7" Hollow Ground Vegetable Knife is a nakiri-inspired chopper with an up-turned, hollow ground edge for added versatility and ease of use. As the name implies, the profile lends really well to chopping, slicing, and mincing vegetables, but it will certainly slice cooked or raw boneless proteins just as well. Just like a santoku, the rudder-shaped blade lends to straight, precise cuts. A seemingly modest curvature on the edge turns more sharply close to the tip, which should be plenty to allow rocker-cuts. It's hard not to like a versatile chopper like this, and the G-56 Vegetable Knife should make a very decent primary knife, particularly in the hands of a veg-centric cook. Despite the wide blade, this is still a Global and you can expect excellent balance.
